Ingredients
1 tablespoon olive oil
1 red bell pepper, deseeded and diced
1 pint cherry tomatoes, sliced in half
8 ounces baby spinach
4 garlic cloves, minced
2 green onions, white and green parts separated
1 pound ground beef (90% lean)
½ teaspoon dried oregano
Kosher salt and black pepper, to taste
2 tablespoons crumbled feta (optional)
Instructions
1. Heat oil in pan and sauté bell pepper and cherry tomatoes until blistered.
2. Add garlic, cook 1 min. Add spinach and white green onion, cook until wilted. Remove.
3. Cook beef with oregano, salt, and pepper. Brown and drain excess fat.
4. Return veggies, stir together, top with green onion greens and feta.
Notes
For added flavor, include kalamata olives, red pepper flakes, or sun-dried tomatoes.
To store, refrigerate in airtight container for up to 4 days or freeze (without feta) for up to 3 months.
