- 1ยพ cups Plain 2% Greek Yogurt
- 4 Large Eggs (room temp)
- 2ยฝ cups All-Purpose Flour
- ยผ cup Ground Flaxseed
- 1 tbsp Baking Powder
- 2 tsp Salt
- 1 tsp Garlic Powder
- ยฝ tsp Red Pepper Flakes (optional)
- Ham & Cheese Chive Add-ins: 1ยฝ cups Spinach, wilted & squeezed dry; ยฝ cup Chives, chopped; 1ยฝ cups Cheddar Cheese (ยฝ cup reserved); 2 cups Diced Ham
- Mediterranean Sausage Add-ins: 2 cups Cooked Italian Chicken Sausage, crumbled; ยฝ cup Sun-Dried Tomatoes, chopped; 1ยฝ cups Feta (ยฝ cup reserved); 2 tsp Dried Basil (or ยผ cup fresh, added after baking)
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Line a baking sheet or grease a muffin tin.
- Whisk yogurt and eggs until smooth.
- Stir in flour, flaxseed, baking powder, salt, garlic powder, and red pepper flakes until just combined.
- Fold in your mix-ins of choice (ham & cheese OR Mediterranean).
- Use โ cup per biscuit. Place on sheet or fill muffin wells.
- Sprinkle reserved cheese or feta. Bake 25 mins until golden and firm.
- Cool 10 mins before serving or storing.
Notes
- Wet hands help shape sticky dough.
- Freeze cooled biscuits in a zip bag; reheat 45 secs in microwave.
