Try Cowboy Chicken Bites for a flavorful and easy meal. Oven-baked chicken never tasted so good!
Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
1 tsp dry mustard
1 tsp dried chives
1 tsp dried parsley
1 tsp garlic powder
1/2 tsp paprika
1/2 tsp dried thyme
1/2 tsp kosher salt
1/2 tsp black pepper
1/8 tsp cayenne pepper
1/8 tsp red pepper flakes
1 tbsp extra virgin olive oil
2 tbsp unsalted butter, cubed
Freshly chopped parsley for garnish
Instructions
1. Preheat oven to 425°F. Lightly spray a 9×13-inch baking dish with cooking spray.
2. Add the cubed chicken directly to the prepared baking dish.
3. In a small bowl, mix all the spices and herbs.
4. Sprinkle the seasoning mixture over the chicken, drizzle with olive oil, and toss to coat.
5. Top with cubed butter, spacing evenly.
6. Bake for 10 minutes, stir, then bake another 8–10 minutes until chicken reaches 165°F.
7. Remove from oven, garnish with parsley, and serve hot.
Notes
Use chicken thighs for a richer flavor if preferred.
Adjust cayenne and pepper flakes to control heat level.
Air fryer method: cook at 375°F for 8–12 mins without butter; drizzle melted butter after.
