These healthy peanut butter Greek yogurt breakfast blondies are soft, chewy, and naturally sweetened perfect for busy mornings, post-workout snacks, or a feel-good treat. Packed with protein and made in under 30 minutes!
Ingredients
1/2 cup natural peanut butter
1/2 cup plain Greek yogurt
1/4 cup honey or maple syrup
1 large egg
1 teaspoon vanilla extract
1/2 cup rolled oats
1/4 cup whole wheat flour
1/4 teaspoon baking soda
1/4 teaspoon salt
1/4 cup mini chocolate chips (optional)
Instructions
1. Preheat oven to 350°F (175°C).
2. Line an 8×8-inch baking pan with parchment paper or lightly grease it.
3. In a mixing bowl, whisk together peanut butter, Greek yogurt, honey, egg, and vanilla until smooth.
4. Stir in oats, flour, baking soda, and salt until combined.
5. Fold in chocolate chips if using.
6. Spread the batter evenly into the prepared pan.
7. Bake for 18–22 minutes, until edges are golden and center is set.
8. Cool in pan for 10 minutes, then lift out and cool fully before slicing.
9. Store in an airtight container in the fridge or freeze individually.
Notes
For a vegan version, use a flax egg and non-dairy Greek-style yogurt.
Swap peanut butter for almond or sunflower butter for variety or allergies.
These blondies are lightly sweetened perfect for breakfast but can double as a healthy dessert.
