Description
This Instant Pot Flan is rich, creamy, and crowned with glossy caramel. A simplified, foolproof version of the classic Latin dessert using pressure cooking for perfect texture every time.
Ingredients
½ can evaporated milk (6 oz)
½ can sweetened condensed milk (7 oz)
3 eggs
4 oz cream cheese, cubed
½ cup granulated sugar (for caramel)
3 cups water (for Instant Pot)
Instructions
1. Caramelize sugar in skillet over medium-high, stirring until amber.
2. Pour into flan pan, swirl to coat bottom and sides, let cool.
3. Blend evaporated milk, sweetened condensed milk, cream cheese, and eggs until smooth.
4. Pour into caramel-coated pan, cover tightly.
5. Place pan on trivet inside Instant Pot with 3 cups of water.
6. Pressure cook on high for 14 minutes, then natural release.
7. Cool 20 minutes, then refrigerate for 3+ hours or overnight.
8. Run knife around edges and invert to serve with caramel topping.
Notes
Use a sealed flan pan or cover tightly with foil. Chill thoroughly before serving. Clean pan by soaking in water to dissolve caramel.
