Description

Spicy Bang Bang Chicken Fried Rice combines crispy chicken, sweet heat sauce, fluffy rice, and veggies in a bold, satisfying meal.


Ingredients

1 ½ pounds boneless skinless chicken breasts, cut into 1-inch cubes

1 tbsp vegetable oil

1 tsp paprika

1 tsp garlic powder

1 tsp kosher salt

½ tsp black pepper

1 cup bang bang sauce, divided

2 tbsp sesame oil, divided

4 large eggs, beaten

½ tsp kosher salt

2 large carrots, diced

1 large white onion, diced

¼ cup green onions, diced

1 tsp garlic, minced

4 cups cooked long-grain white rice

¼ cup melted unsalted butter

1 tsp lemon juice

2 tbsp soy sauce

⅓ cup frozen peas


Instructions

1. Toss chicken with oil, paprika, garlic powder, salt, and pepper.

2. Air fry at 400°F for 11–12 minutes or cook in skillet until golden and 165°F inside.

3. Coat cooked chicken with ½ cup bang bang sauce and set aside.

4. Heat 1 tbsp sesame oil in a skillet over high heat. Scramble eggs with salt, then remove.

5. Add remaining sesame oil, carrots, onions, and green onions. Cook until tender.

6. Add garlic, then stir in cooled rice. Cook until heated through.

7. Stir in scrambled eggs, butter, lemon juice, soy sauce, and peas. Mix well.

8. Top with bang bang chicken and drizzle remaining sauce. Garnish and serve.

Notes

Use day-old rice for best texture.

Store in fridge for up to 4 days or freeze for 3 months.

Reheat in skillet with oil or microwave with damp paper towel.
