Ingredients
Scale
- 1 pound frozen tater tots
- 1 pound breakfast sausage
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 large eggs
- 1 cup shredded cheddar cheese
- Chopped green onions (for garnish)
Instructions
- Preheat the oven and bake the tater tots according to package instructions until golden and crispy.
- In a large skillet, cook the breakfast sausage over medium heat until browned and crumbly, about 5-7 minutes.
- Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
- Gradually whisk in the milk, stirring constantly until the mixture thickens, about 5 minutes.
- Season the gravy with salt, black pepper, and garlic powder. Reduce heat to low to keep warm.
- In a separate pan, scramble the eggs to your desired doneness, seasoning lightly with salt and pepper.
- To assemble, place a layer of tater tots in each bowl, top with scrambled eggs, pour over sausage gravy, and sprinkle with cheddar cheese.
- Garnish with chopped green onions before serving.
Notes
- Feel free to customize the toppings with additional ingredients like avocado or salsa.
- For a spicier kick, consider adding some hot sauce to the gravy.
