- 1 cup warm milk (105-115ยฐF)
- 1/4 oz active dry yeast (2 1/4 tsp)
- 1/4 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp salt
- 1/4 cup unsalted butter, melted
- 3 1/2 to 4 cups all-purpose flour
- Vegetable oil, for frying
- Powdered sugar, for dusting
Instructions
- In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let stand 5-10 minutes until foamy.
- Whisk in remaining sugar, egg, vanilla, salt, and melted butter.
- Gradually add flour, knead 5-7 minutes until smooth and elastic.
- Place dough in greased bowl, cover, let rise 1โ1.5 hours until doubled.
- Punch down dough, roll to 1/4 inch thickness, cut into 2โ3 inch squares.
- Heat vegetable oil to 350ยฐF (175ยฐC). Fry beignets 1-2 minutes per side until golden and puffed.
- Drain on paper towels, dust generously with powdered sugar, and serve warm.
