  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 3 1/2 to 4 cups all-purpose flour
  • Vegetable oil, for frying
  • Powdered sugar, for dusting

Instructions

  1. In a large bowl, combine warm milk, yeast, and a pinch of sugar. Let stand 5-10 minutes until foamy.
  2. Whisk in remaining sugar, egg, vanilla, salt, and melted butter.
  3. Gradually add flour, knead 5-7 minutes until smooth and elastic.
  4. Place dough in greased bowl, cover, let rise 1โ€“1.5 hours until doubled.
  5. Punch down dough, roll to 1/4 inch thickness, cut into 2โ€“3 inch squares.
  6. Heat vegetable oil to 350ยฐF (175ยฐC). Fry beignets 1-2 minutes per side until golden and puffed.
  7. Drain on paper towels, dust generously with powdered sugar, and serve warm.
