Ingredients
2 large sweet potatoes, cubed
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1 lb ground beef or turkey
2 tbsp taco seasoning
1/4 cup water
1 ripe avocado, sliced
2 cups cottage cheese (blended optional)
1/2 cup diced tomatoes
1/2 cup shredded lettuce
Sliced jalapeños, chopped cilantro, hot sauce (optional)
Instructions
1. Preheat oven to 400°F. Toss cubed sweet potatoes with olive oil, garlic powder, paprika, and salt. Roast 25–30 minutes.
2. While potatoes roast, brown ground meat in a skillet. Drain fat, stir in taco seasoning and water. Simmer 5 minutes.
3. Slice avocado and prepare any other toppings.
4. Blend cottage cheese for a creamy texture (optional).
5. Assemble bowls: layer sweet potatoes, taco meat, cottage cheese, and toppings.
6. Add jalapeños, hot sauce, or cilantro to finish.
Notes

For a vegetarian option, use black beans instead of ground meat.
